Karen Coruthers is a bi-lingual (Spanish/English) Nutritionist and is the Founder of Keystone Enrichment Community Center (KECC) & Keystone Education Center, Illinois.

Karen has a bachelor’s degree in Nutrition and a Masters degree in Education.

He is passionate about food safety and food security.

Ms. Coruthers wrote her first book in 2011, which is a Nutritional Education Cook book titled “Karen’s Exquisite Cuisine” and her second book titled “Winds of Change,” was written in 2018 which is an autobiography about Karen’s life adventures and lessons learned.
